Tasting notes

With fine and persistent bubbles, it is very elegant and harmonious. Intense and distinct, it combines citrus and some white fruit notes with nuances of toasted bread. Full-bodied and very persistent, with beautiful acidity, it finishes beautifully and complex, marked by the typical minerality of the grape that originated it.

Vinification

After pre-cooling to 5ºC, the grapes were gently pressed without crushing or destemming. The obtained must was clarified by static decantation, followed by controlled temperature alcoholic fermentation to obtain the sparkling wine base, which remained on the fine lees of fermentation for 1 year. After disgorging, the second fermentation took place in the bottle (champagne method).
The aging on the lees was approximately 15 months in the bottle, with disgorgement taking place in July 2023.
