Vinification

Hand-harvested grapes at optimal ripeness, resulting in higher aromatic and polyphenolic concentrations. After gentle crushing and total destemming, fermentation takes place in stainless steel vats and traditional lagares, allowing the smooth extraction of quality compounds from the grape skins.
